When most people think about waffles, they imagine the sweet breakfast waffle that comes topped with whipped cream and strawberries. (Am I right??) But savory waffles. Oh, this baby is a whole ‘nother thing.

A savory waffle recipe starts with a basic waffle batter that can be changed up infinitely to embrace the idea of a not-sweet waffle. You know that person at the table who just doesn’t want anything sweet to eat in the morning? That’s right. These savory waffles are for them. Filling and satisfying without the added sugar.

Add herbs and veggies to the batter, stir in shredded cheese and crumbled bacon (ooh la la!), or make cornbread waffles.

But don’t stop with the basic waffle batter. So many other things can be waffled. Leftover macaroni and cheese. Cooked spaghetti noodles. Mashed potatoes. Falafel. Leftover Thanksgiving stuffing. The possibilities are endless, here.

And then there are the “not waffles” that come out of that waffle iron tasting mighty fine. You can make grilled cheese sandwiches in your waffle iron and make a darned good pizza waffle.

Top savory waffles with a fried egg, serve them alongside smoked salmon, add a dollop of sour cream, or use them as sandwich bread for a company-worthy lunch that will be the talk of the town.

Get that waffle iron, out, folks. You’ve got some waffling to do!
